Cauliflower Rice

Inspired by a post I saw on NomNomPaleo, cauliflower ‘rice’ was one of the first paleo dishes I ever made.

Cauliflower rice acts as a dynamic complement to any saucy meal! Worried that you can’t have a paleo mloukhiya? Bam, cauliflower rice. Concerned that there is no low-carb version of Nasi Goreng? Boom. Cauliflower rice!

1 large cauliflower
3 tbsp olive oil

Cooking method:
Chop the cauliflower into florets and stem, wash, rinse, and dry off.

Drop the cauliflower into a food processor (or bit by bit into a blender, as I did for months), blast using the ‘pulse’ feature on your machine, and you’ll get a final result of pieces of cauliflower the same size as short-grain rice.

Preheat a frying pan on med-high, drop the olive oil in, and the now-pulvirized cauliflower.

Stir fry for 3-4 minutes, and until the mixture starts steaming and looks fluffy and moist.

Serve hot, topped with your favorite stew or sauce, and Bob’s your father’s brother!
