Pineapple Chicken & Bacon Kebabs

I got the inspiration for these kebabs from  Unrefined Kitchen. I thought they looked so lovely and a nice alternative to traditional kebabs. I’ve tweaked the recipe a little to cut down on prep time but the original and very tasty looking recipe can be found here:

Super simple and super tasty:

Ingredients:  (makes 8 skewers

Cooking method:

If you haven’t bought pre-marinated chicken chunks, cut breasts into even chunks and marinate in your favourite spicy concoction. I bought “Hot and Spicy” locally marinated chicken which was delicious, the pineapple cut the spice brilliantly. They were such a hit at the bbq, everyone said the chicken was creamy and melted in your mouth

Build your sticks starting with pineapple then wrap a chicken chunk in half a strip of streaky bacon and pierce through both the bacon and the chicken. Next add another chunk of pineapple,  a plain chunk of chicken, then pineapple, then bacon chicken finishing in pineapple piece and topping with a mushroom.

    • Thanks 🙂 I reckon they would work pretty well. I’d start off with them in the oven for about 15-20 mins to cook the chicken through then turn the grill/broiler on to brown them off. Let me know if you try it and how it works out. 🙂
