Bacon Wrapped Asparagus

OK OK…so I know that wrapping something in bacon is a bit like cheating because you could pretty much wrap anything in bacon and it would taste good, but these little canapes are one of the few things you can bring to non-caveman party and they get gobbled up by everyone – no questions asked. It really is a win win situation; you get to keep on track, no one questions your diet or feels sorry for you not being able to eat cheese footballs, crisps, bread sticks etc. Winner!

There really isn’t much of a recipe, this is more a food inspiration post:

If you are using large asparagus you may want to blanch it first but with the baby spears I used, no pre-cooking was required. Cut around 4 spears in half and lay half a strip of streaky bacon on your board then place all 8 halves in a little bundle and crumble a little bit of cheese (optional) and tightly wrap it all up.

Place on a baking tray (no oil required) and once all are made place in a pre-heated oven at 180 deg C for around 20 minutes or until the bacon is just starting to turn a delicious golden-brown.

Enjoy hot or cold 🙂
