Moroccan Eggs

I’m sorry about the lack of posts lately, both of us have been on holiday. I spent a week surfing and doing yoga on the coast of Morocco and Khalid went with his friends on a boys trip to Germany and Holland.

I was surprised to find that eating Paleo was in fact fairly simple in Morocco. Most of the food consisted of tagines with chicken and vegetables, eggs and barbecued meat. I thought that it would be nice for both of us to share our favourite dish of the holiday. Mine was without a doubt the Moroccan omelette which we had for breakfast most mornings. There isn’t a set recipe for this omelette as they just use whatever vegetables they had available or leftover from the night before. Maybe it was the sea air or maybe it was the fresh ingredients but for some reason this was amazing!

There was usually a combination of onions, tomatoes, carrots, green olives, peas, green string beans and garlic which were finely chopped then sautéed in a metallic dish then when it was almost done they would crack 3 eggs in and cover it with a tajine lid to finish it off! Deeelish

Khalid is back tomorrow so we will be hearing about his sauerkraut, German sausage, frilendel or mayo chips!
