Oven ‘Fried’ Chicken

Mmmmm….Everyone loves fried chicken. Unfortunately fried chicken fails on the flour level and on the deep fried level – so we usually have to go without! Fear not fellow cavepeeps! This recipe combines almond flour and milled flax seeds for a satisfyingly crunchy crust and is oven baked so actually gets a tick of approval all round! It’s one of those meals you eat and feel like you have cheated but there really is nothing naughty in it, not even oil!!

Ingredients:  (makes 12 goujons)

  • 500g chicken breast (cut into gojons)
  • 1/2 cup almond flour
  • 1/2 cup milled flax seeds
  • 2 Tablespoons sesame seeds
  • 2 Tablespoons of coconut flour
  • 1 Tablespoon of paprika
  • 1 Tablespoon of garlic powder
  • 1 teaspoon of ground back pepper
  • 2 Eggs

Equipment needed:

  • 1 large freezer ziploc bag
  • a baking rack

Cooking Method:

Start by mixing all the dry ingredients in a ziploc frezer bag and shake it to mix them well. The ziploc freezer bag is optional and this can all go in a big bowl too but I promise it makes it so much easier, no washing up and no wastage.

Next slice your chicken breasts into goujons. Crack 2 eggs into a flat bowl and whisk well then dip each strip in the egg mixture ensuring its well coated and chuck the eggy chicken strip into your zip loc bag. I find you can do up to 4 strips at a time but any more ends up not being coated that well. We double dipped the remaining 4 (as in  took the strips back out of the bag, into the egg and repeated the process

The baking rack is also not essential but I really would recommend it because it keeps the chicken elevated so you get that all round crunchy feel rather than soggy and it also eliminates the need for any cooking oil rendering it that little bit healthier.

Bake for 35-45 mins at 180 degreesC turning once
