Every now and then you make a dish that seems to be so incredibly simple to prepare yet so delicious that your mid week meal becomes a staple you could serve at dinner parties! This Prosciutto-wrapped salmon is one of them.
Ingredients – serves 2
300g salmon fillet
6-8 slices of Italian prosciutto
2 Tablespoons Home made pesto
2-3 Tablespoons of Full fat Greek yoghurt (replace with coconut cream if you don’t eat any dairy)
Juice of half a lemon
Plenty of black pepper
Prepare your salmon by removing the skin with a sharp knife and cutting it lengthways into two fillets. You can keep the skin on if you prefer as it’s full of nutrients but it won’t go crispy in this dish.
In a small bowl mix your pesto with Greek yoghurt, lemon juice and black pepper then lay out 3-4 overlapping strips of prosciutto. Gently lay your salmon on your strips and cover generously in the pesto mix. Wrap the strips back round and lay upside down (to keep it all together) on your baking tray.
Cook in a preheated oven (180degC or 375F) for 20 mins, turning half way. Serve with veggies, salad or Cauliflower and Carrot Mash
